i love food. but i love fitting into my skinny jeans even more. this blog is about trying to keep things straight in my head, which isn't easy. |
Thanks to Tres Ladies i was able to finally cook my acorn squash tonight! Pics of that to follow shortly! Check’em out guys their shirts are super cute, i have one and every time i wear it people ask me where i got it!!!
Not sure I’ve ever eaten Acorn Squash before but I have to say this combo was awesome. This is a great Paleo-friendly super delicious recipe.
**note: this picture came from chow.com and includes rice and other non-Paleo friendly deliciousness, but seeing as how this serves 2 and we were starving, no picture of our dinner is available
2 servings
• one small acorn squash
• ½ C chopped apple
whatever spices you want, any variation can go in here
Cut around the stem end of the squash and remove, much like how you would start if carving a pumpkin. With a spoon, dig out the seeds and pulp. Cut a flat spot on the bottom of the squash, so it will stand up. Place the squash on a baking pan, bake at 400 degrees for 25 minutes.
Meanwhile, brown the ground turkey in a skillet, adding the apple and spices. After 25 minutes, remove the squash and fill the cavity with the turkey/beef mixture. Return the squash to the oven for 15 more minutes. Allow to cool before eating!
